JOLLOF SAUCE

I'll take you somewhere else.

Jollof rice, often featured in Nigerian movies, is much more than just a dish.

Jolloff is popular in West Africa, particularly in Nigeria, Ghana, Senegal and other countries in the region. It is a spicy rice cooked in a tomato sauce with onions, peppers and various spices. Vegetables, meat such as chicken, beef, fish or seafood are often added.

Each country has developed its own version of Jollof, and there is a friendly rivalry between nations to see who makes the best Jollof. It is a festive dish often served on special occasions and celebrations.

Speaking of jollof rice, have you ever had the chance to taste it or prepare it yourself?

It's great that you're curious!

Jollof rice is a really delicious and flavorful dish. If you like spicy and aromatic dishes you will surely enjoy it.

These differences give each version of jollof rice its own distinct character and flavor.

To start, you could try making this version at home.

Here is a simple recipe for Ghanaian jollof rice:

Ingredients :

2 cups basmati rice

4 fresh tomatoes, blended

1 can of canned tomatoes

1 onion, chopped

2 cloves garlic, chopped

1 piece of ginger, grated

1 red pepper, diced

2 carrots, diced

1 cup green beans, chopped

1 teaspoon nutmeg

1 teaspoon paprika

1 bouillon cube of your choice

Salt and pepper

Oil

Preparation :

Rinse basmati rice in cold water until water runs clear. Drain and set aside.

Heat oil in a large saucepan over medium heat. Add onion, garlic and ginger, and sauté until golden brown.

Add the blended and canned tomatoes, and simmer for about 10 minutes.

Add the pepper, carrots and green beans. Season with nutmeg, paprika, stock cube, salt and pepper. Cook for another 5 minutes.

Add the rinsed rice and mix well so that the rice is well coated with the sauce.

Add 4 cups of water, bring to a boil, then reduce heat and cover. Simmer for about 20 to 25 minutes, or until rice is cooked and water is absorbed.

Stir occasionally to prevent the rice from sticking to the bottom of the pan.

And there you have it, your Ghanaian jollof rice is ready to enjoy!

I had the pleasure of being invited by WAOUUU to the launch of the jollof sauce that truly enchanted my taste buds during the tasting, at the restaurant “LE PETIT SAMARITAIN”, located in the 1st arrondissement of Paris. This small but charming restaurant offers a traditional French menu and has recently added jollof rice to its menu, prepared with their own homemade sauce. Soon, they will also offer Ghanaian dishes for delivery via Uber Eats, perfect for spicy food lovers and for traveling through flavors.
